Bircher Muesli

This is one of my all-time favourite breakfasts, in fact I had to stop photographing it this morning, when I could no longer restrain myself from digging in! Two versions of Swiss-style Bircher Muesli – one with almonds, blueberries and raspberries, and the other with hazelnuts, golden raisins and dried pears. Nutty, fruity, oaty goodness in a bowl 🙂 (I sprinkled mine with a teaspoon of crushed left-over praline I had for extra indulgent Christmassey fabulousness)

1/4 c toasted sunflower seeds
1 cup toasted, skinned hazelnuts, roughly chopped
3/4 cup golden raisins (or regular)
3/4 c dried pears, chopped
2 cups rolled oats
1 cup natural Greek yoghurt
1/2 cup milk
1 1/2 cups natural apple & pear juice
2 red apples, grated


1/4 cup toasted sunflower seeds
1 cup flaked almonds, toasted
1 cup fresh raspberries
1 cup fresh blueberries
2 cups rolled oats
1 cup natural Greek yoghurt
1/2 cup milk
1 1/2 cups natural apple juice
2 green apples, grated

Mix all ingredients except the apples together and store in a sealed container in the fridge over night. In the morning add grated apple, and an extra splash of milk or juice to achieve the texture that appeals most to you. Packed with oaty soluble fibre and vitamin loaded fruit, this is healthy, filling and delicious! Serves 6-8
