herbilicious nutty salad with feta & radish

You may be looking at this salad thinking well that’s a bit boring, but I urge you to look again…see that crumbled feta, the baby herb leaves, the crumbled walnuts, the drizzle of simple dressing, the thin slices of radish – now imagine a mouthful with everything – the salty soft feta, the bitter leaves, the zingy herbs, the heat of the radish, crumbly nutty walnuts and the tart dressing – see?! See what I mean! It’s actually bloody delicious – so fresh and deceptively complex! Well, anyway, I love it 🙂 and it is perfect with simply cooked fish or chicken for a healthy, tasty lunch. Hurrah!

2 cups mixed salad greens

1 cup baby herbs /  microgreens eg mint, basil, coriander, dill
1/4 cup walnuts, lightly toasted, chopped quite small
2 radishes, finely sliced – ideally with a mandolin
80g-100g soft feta, crumbled
1/4 cup edible flowers (optional)
3 tbs white balsamic
2 tbsp olive oil
1 tsp caster sugar
1 tsp Dijon mustard
sea salt and freshly ground black pepper

 

Layer salad ingredients onto a serving plate. Whisk dressing ingredients together and drizzle over salad. Serve immediately! Perfect with simply cooked fish or chicken. Serves 4 as a side

    1. Hi Marcelle – and thank you so much for lovely comment! I'm no expert when it come to cameras, but feel pretty confident in recommending either Nikon or Canon – I started with a Nikon D600 then upgraded to a D800, and I mostly use a 50mm 1.4G lens as the 50mm is closest to what your eye sees…hope that helps! 🙂
